What is AI food waste reduction?

AI food waste reduction is the use of forecasting models to match food production and purchasing to real demand in kitchens and fresh-food retail. Using sales history, bookings, weather, events and local calendars, it outputs daily cover and dish forecasts, prep quantities per item and shift, supplier order suggestions, and markdown timing for short-dated stock, then measures waste against the plan.

Will forecasting cause menu items to run out?

It should not, and we measure it. Every forecast includes a range, and prep targets are set to a service level you choose per item, higher for signature dishes and lower for items with easy substitutes. Menu stock-outs are tracked alongside waste in the pilot, so you see both sides of the trade-off before rolling out.
